As Thanksgiving closes in, anything that can be made ahead is sure to be on rotation during the holidays! Today's recipe is a staple in our kitchen, and a recipe we borrowed from a friend! Plus, who doesn't like cream cheese in their mashed potatoes (sign us up, E-V-E-R-Y T-I-M-E!).

You'll notice we left the skins on, but the recipe may note peeling the potatoes. Entirely your preference, nonpeeled potatoes may feel more fitting for a casual weeknight side, whereas peeled potatoes might be more approrpiate for a group you're hosting.
Potatoe skins, if left, do provide some health benefits including B vitamins, vitamin C, iron, calcium, fiber, and potassium.

If planning to make ahead, be sure not to freeze. We recommend if making the day before, refridgerating and bringing to room temperare before baking.
